Cast Iron Baked Salmon with Roasted Broccoli

Ingredients:

  • 4 pink salmon fillets
  • 1 bunch of broccoli, florets separated
  • 2 tablespoons olive oil
  • 2 tablespoons Fish On Fish & Seafood Rub
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 400°F (200°C).
  2. Prepare the Pink Salmon:

    • Pat the pink salmon fillets dry with paper towels.
    • Place the pink salmon fillets in a cast-iron skillet.
  3. Coat with Olive Oil:

    • Drizzle olive oil over the pink salmon fillets, ensuring they are well-coated.
  4. Season the Pink Salmon:

    • Sprinkle the Fish On Fish & Seafood Rub evenly over each pink salmon fillet, ensuring the rub adheres to the oiled surface.
  5. Prepare the Broccoli:

    • In a large bowl, toss the broccoli florets with olive oil, salt, and pepper.
  6. Arrange in the Cast Iron Pan:

    • Place the seasoned pink salmon fillets in the cast iron pan, and arrange the seasoned broccoli around them.
  7. Bake in the Oven:

    • Place the cast iron pan in the preheated oven and bake for 15-20 minutes or until the pink salmon is cooked through and flakes easily with a fork.
  8. Broil for Crispy Texture (Optional):

    • If you prefer a slightly crispy texture on top, you can switch the oven to broil for the last 2-3 minutes of cooking. Keep an eye on it to prevent burning.
  9. Serve:

    • Carefully remove the cast iron pan from the oven.
    • Plate the pink salmon fillets alongside the roasted broccoli.
  10. Garnish and Enjoy:

  • Squeeze fresh lemon wedges over the pink salmon just before serving to add a burst of citrusy flavor.
  • Garnish with additional Fish On Fish & Seafood Rub if desired.
