Hunter's Reserve Crispy Drumstick Chicken

Ingredients:

  • 8 chicken drumsticks
  • 1 cup all-purpose flour
  • 3 tablespoons Hunter's Reserve Grilling Rub
  • Enough butter-flavored Crisco to generously coat the bottom of your pan
  • Salt and pepper, to taste
  • Fresh rosemary sprigs for garnish

Instructions:

  1. Prepare the Drumsticks:

    • Pat the drumsticks dry with paper towels. This step is crucial for achieving crispy skin.
  2. Air Drying:

    • Place the dried drumsticks on a wire rack and let them air dry at room temperature for about 15-20 minutes. This helps to remove excess moisture from the skin, contributing to a crispier texture.
  3. Seasoned Flour Coating:

    • In a mixing bowl, combine the all-purpose flour and Hunter's Reserve Grilling Rub. Mix well to ensure an even distribution of the seasoning.
  4. Coat the Drumsticks:

    • Dredge each drumstick in the seasoned flour mixture, ensuring an even coating on all sides. Shake off any excess flour.
  5. Preheat the Large Cast Iron Pan:

    • Place your larger cast iron pan on medium-high heat and add enough butter-flavored Crisco to generously coat the bottom of the pan.
  6. Cook the Drumsticks:

    • Carefully place the seasoned and floured drumsticks in the hot cast iron pan. Allow them to cook for about 10-12 minutes, turning occasionally, until the skin is golden brown and crispy, and the internal temperature reaches 165°F (74°C).
  7. Rest Before Serving:

    • Remove the drumsticks from the pan and let them rest for a few minutes. This allows the juices to redistribute, keeping the chicken moist.
  8. Garnish:

    • Garnish the crispy drumsticks with fresh rosemary sprigs. You can place a sprig on top of each drumstick for a visually appealing and aromatic touch.
  9. Serve:

    • Plate the drumsticks and serve them hot. Pair them with your favorite sides like mashed potatoes, coleslaw, or a simple green salad.
