Southwestern Sausage Breakfast Hash



  1. Preparation:

    • Preheat your oven to 375°F (190°C).
    • Dice the sweet potatoes into small cubes.
    • Cut the cherry tomatoes in half.
    • Remove the casing from the sausage if necessary.
  2. Cooking:

    • In a cast-iron skillet, cook the sausage over medium heat until browned and cooked through. Break it into crumbles as it cooks.
    • Remove excess grease, leaving about a tablespoon in the skillet.
    • Add the diced sweet potatoes to the cast iron skillet and cook until they start to soften.
    • Once the sweet potatoes are almost done, add the halved cherry tomatoes and cook until they are slightly softened.
  3. Seasoning:

    • Sprinkle 1-2 tablespoons of Fiesta Frenzy - Southwestern Rub over the mixture. Adjust according to your taste preferences.
  4. Eggs:

    • Create wells in the hash mixture and crack eggs into each well.
    • Transfer the cast iron skillet to the preheated oven and bake for about 15-20 minutes, or until the eggs are cooked to your liking.
  5. Serve:

    • Once the eggs are cooked, carefully remove the hot cast iron skillet from the oven.
