Southwestern Sausage Breakfast Hash
Ingredients:
- Cherry tomatoes
- Sweet potatoes
- Sausage
- Eggs
- Fiesta Frenzy - Southwestern Rub
Instructions:

Preparation:
- Preheat your oven to 375°F (190°C).
- Dice the sweet potatoes into small cubes.
- Cut the cherry tomatoes in half.
- Remove the casing from the sausage if necessary.

Cooking:
- In a cast-iron skillet, cook the sausage over medium heat until browned and cooked through. Break it into crumbles as it cooks.
- Remove excess grease, leaving about a tablespoon in the skillet.
- Add the diced sweet potatoes to the cast iron skillet and cook until they start to soften.
- Once the sweet potatoes are almost done, add the halved cherry tomatoes and cook until they are slightly softened.

Seasoning:
- Sprinkle 1-2 tablespoons of Fiesta Frenzy - Southwestern Rub over the mixture. Adjust according to your taste preferences.

Eggs:
- Create wells in the hash mixture and crack eggs into each well.
- Transfer the cast iron skillet to the preheated oven and bake for about 15-20 minutes, or until the eggs are cooked to your liking.

- Once the eggs are cooked, carefully remove the hot cast iron skillet from the oven.
- Garnish the Baked Cast Iron Southwestern Sausage Breakfast Hash with fresh whole cherry tomato and dill.
