Ribeye Steak with Chillin' & Grillin' and Sautéed Asparagus
Ingredients:
- 1 boneless ribeye steak (about 1 inch thick)
- 2 tablespoons of Chillin' & Grillin' - Grill Seasoning
- 2 tablespoons of unsalted butter
- Fresh rosemary sprigs
- Salt and black pepper to taste
- Olive oil for searing
- 1 bunch of fresh asparagus spears, woody ends trimmed.
Instructions:

Take the ribeye steak out of the refrigerator and allow it to come to room temperature for about 30 minutes. This ensures even cooking.

While the steak is resting, preheat your cast iron pan over medium-high heat. You want it to be hot to achieve a good sear.

Season both sides of the ribeye steak with Chillin' & Grillin' - Grill Seasoning and a pinch of salt and black pepper if desired.

Add a drizzle of olive oil to the hot cast iron pan. Carefully place the seasoned steak in the pan.

Sear the steak for about 3-4 minutes on each side for medium-rare (internal temperature 130°F or 54°C) or 2-3 minutes on each side for rare (internal temperature 120°F or 49°C), adjusting the time to your desired level of doneness. Use a meat thermometer to check the internal temperature.

In the last minute of cooking, add the butter and a few fresh rosemary sprigs to the pan. Tilt the pan slightly and use a spoon to baste the steak with the melted butter and herbs.

While the steak is resting on a cutting board, prepare the asparagus. In the same pan, add the trimmed asparagus spears and sauté them for about 4-5 minutes, stirring occasionally until they become tender and slightly charred.

Slice the ribeye steak against the grain, garnish with the remaining fresh rosemary, and drizzle the pan juices and butter over the top.
