Honey-Lime Chillin & Grillin Oven Chicken
with Roasted Honey Butter Carrots

Ingredients
Honey-Lime Oven Chicken

1½–2 lbs chicken thighs or breasts

2 tbsp olive oil
-
2 tbsp honey
-
Juice and zest of 1–2 limes
-
1–1½ tbsp Chillin & Grillin seasoning from Jinx’em Scents
Roasted Honey Butter Carrots
-
1 lb carrots, peeled (whole or sliced)
-
2 tbsp butter, melted
-
1 tbsp honey
-
1 tbsp olive oil
-
½–1 tsp Chillin & Grillin seasoning
-
Black pepper, to taste (optional)
Instructions
Step 1: Preheat Oven
Preheat oven to 425°F. Line two sheet pans with parchment paper or foil.
Step 2: Prepare the Chicken

In a bowl, whisk together olive oil, honey, lime juice, lime zest, and Chillin & Grillin seasoning.

Coat chicken evenly with the mixture.

Place chicken on one prepared sheet pan.
Step 3: Prepare the Carrots

In a separate bowl, mix melted butter, honey, olive oil, Chillin & Grillin seasoning, and black pepper.

Toss carrots until fully coated.

Spread carrots in a single layer on the second sheet pan.
Step 4: Roast

Place both pans in the oven.

Roast for 22–28 minutes, flipping carrots halfway through.

Chicken is done when it reaches 165°F internal temperature.
Step 5: Optional Finish
For extra caramelization, switch oven to broil and broil both pans for 2–3 minutes, watching closely.
